The first thing I learned about this dish is that Acqua Pazza means "crazy water" in Italian. And, at this point, I was hooked. Then I learned Acqua Pazza can have many of variations, but generally, it involves poached white fish in an herbed broth. The recipe was created by peasants who only had a little wine left over and to make that stretch into a meal, they would add a bunch of stuff to it in a stone pot, and of course, it turned out to be delicious.
